I woke up this morning rarin' to go. I had a load of great ideas and things I wanted to do today. First on the list was to make my favorite New Year's Day Soup. I got it all ready and on the stove... Ahhhh, relax and watch the Rose Parade..... 2nd thing to do. Well, God had other plans. I feel asleep watching the parade and woke up with a sore throat. Yuck !! Not the way I wanted the yr. to start on the other hand the soup was ready and oh,how good it taste and feels on this throat.

Thought I would share the recipe. I found this one yr's. ago in my favorite magazine.... Southern Living. Loaded with vit's. and good things for you.

New Year's Day Soup

Yield
10 cups
Ingredients
1 cup diced smoked lean ham
2 celery ribs, chopped
1 medium onion, chopped
2 carrots, chopped
2 garlic cloves, minced
2 (15-ounce) cans black-eyed peas, undrained
2 (14 1/2-ounce) cans low-sodium, fat-free chicken broth
2 (14 1/2-ounce) cans no-salt-added stewed tomatoes, undrained
1 (14 1/2-ounce) can no-salt-added diced tomatoes, undrained
1 (8-ounce) can tomato sauce
1 1/2 cups chopped fresh spinach
1/2 cup chopped fresh parsley
1/2 teaspoon pepper
Garnish: chopped fresh spinach
Preparation
Saute first 5 ingredients over medium heat in a Dutch oven until vegetables are tender.
Stir in black-eyed peas and next 4 ingredients; bring mixture to a boil. Cover, reduce heat, and simmer 1 hour and 30 minutes. Stir in 1 1/2 cups spinach, parsley, and pepper. Garnish, if desired.

Painted on both sides with Paris Pink roses and my own mix of sage greenery.
The rim has been painted pink to compliment the rose design.
It stand 7" and is 4 1/4" in diameter at the base. A wonderful addition to

4th Day of Christmas....

My true love gave to me a lovely Cranberry Cake Recipe.
You will love it. I promise. I took this one to all the school functions

when our daughter was in elementary school.
There was never a crumb left. I have to hide it if I want
a piece.

Cranberry Cake

3 eggs
2 cups sugar
3/4 cup butter or margarine, softened
1 teaspoon almond extract
2 cups all-purpose flour
2 1/2 cups fresh or frozen cranberries, thawed
2/3 cup chopped pecans
Whipped cream, optional

In a mixing bowl, beat eggs and sugar, until slightly thickened and light in color, about 5 minutes. Add butter and extract; beat 2 minutes. Stir in flour just until combined. Stir in cranberries and pecans. Spread in greased 13-in.x 9-in.x 2-in. baking pan. Bake at 350 degree oven for 45-50 minutes or until a wooden pick inserted near the center comes out clean. Serve with whipped cream if desired. Yield: 16-20 servings

Black Friday and Cyber Monday are almost upon us. This year the decisions you make with your hard-earned money will have more impact than ever before.

2. If you have to buy gift cards buy from someone who’s work you like from the above suggestion.

4. When in doubt for the man in your life buy digital items. Even better, give a donation and make many people happy.

Something a little bit different

Ahhh, I woke up this morning and it's still cold. I love it and feel so rejuvenated.
I love to cook when the weather is like this but I always want something fast because there's so much I want to do. I thought I would share one of my favorite recipes with you. These are so yummy and easy to fix.

Enjoy.

Cheesy Chicken Bundles

2 cans(5 oz.)chunk chicken, drained and flaked
1 pkg.(3 oz.) cream cheese
4 green onions, chopped
1/2 t. black pepper
1 pkg. refrigerated crescent rolls
Preheat oven to 350*F.
Coat baking sheet with nonstick cooking spray.
In a medium bow, combine chicken, cream cheese, green onions and black pepper; mix well.
Unroll crescent rolls and separate dough into 4 rectangles using perforations as guide. Gently press together the diagonal perforation that crosses each rectangle.
Place 1/4 of the chicken mixture in the center of each rectangle. Pull the 4 corners of each rectangle up to the center: wrapping the dough around the chicken mixture. pinch dough together just above the chicken mixture ,leaving the points of the dough free at the top. Place bundles on baking sheet and bake 20-25 minutes ,or until golden brown. Serve immediately.

**I don't use as much green onion and you can also cook your own chicken instead of using canned. These are really good the 2nd day reheated. I always make a double batch.

Fall Is Finally Here

So sorry I haven't posted since Ike. So much has been going on. Between home schooling our daughter and her friend to taking care of FIL I feel like a tornado has whipped through our house,LOL.

Fall has finally arrived in south Texas. I have been enjoying the weather so much. I love the cold and Christmas. Christmas is one of my favorite holiday's and I can't wait to start decorating. Glitter is everywhere. It's as close to a winter wonderland as I can get this deep in the south.

I have been busy. Here's a couple of things I've been working on. I've added several new items to the site so be sure to check. More is coming soon. Lot's of Christmas ornaments and pink pretties coming.

Here we go again....

This time we are running from hurricane Ike. It seems like just yesterday we were running from Rita. Actually it was 3 yrs. ago Sept. 25,2005. What a nightmare. Needless to say this time has had it's own problems. The biggest problem has been trying to get someone to transport my FIL out of harms way. We are waiting to be notified as to when EMS will come to pick him up and then we will follow them to San Antonio.

This is one of the hardest things a person has to do.... pack up and leave your home and not know if you will have somewhere to come back to. My heart goes out to all that are running from this storm. Please keep us all in your prayers.
